Inspired by the recipe by Andrew MConnell in his Cumulus Inc recipe book, this is by far the best lamb shoulder recipe that perfectly pairs with our Grampians Shiraz.

This has been my favourite for years and once tasted, one is hooked forever

The Shoulder is a hard working joint of the Lamb with wonderful muscular fat and cartilage. When the joint slowly bakes it slowly bastes the meat, leaving a fabulous crust of caramelised goodness.

2017 Clarnette & Ludvigsen Black Label Shiraz Reviewed by Campbell Mattinson

Yes there’s a smidgen of Viognier in this wine but it still tastes like archetypal Great Western shiraz, in a good way.

It takes its time to open up but patience is rewarded. This is a red wine with a lot going for it. It’s bunched with herbs, sprayed with pepper and fennel-like around the edges but its heart is cherried and plum-shot and soft. Tannin frames the whole without intruding. This is a mid-weight red with easy-going-but-distinct herb-driven complexity and excellent overall balance. Crunchy acidity works in context. Indeed it’s built on acidity but has a lot more going for it than that. The longer I sat with this the more it charmed.
